Baked sausages feed a crowd with minimal effort. To make sure they cook evenly, elevate them on the rack of a broiler pan, and allow any excess fat to drip down into the pan, or outfit a roasting pan or baking pan with a rack.
- 18 to 24 breakfast sausage.
- Preheat an oven to 400°F.
- Place sausages in a shallow pan. Roast until the sausages are shiny but not yet browned, about 10 minutes. Turn the sausages over and continue roasting until cooked through, about 5 minutes more.
- Preheat a broiler. Place the pan under the broiler and broil the sausages, turning once, until browned, 2 to 3 minutes per side. Transfer to a warmed platter and serve hot.
